How To Cook: |
1. Carefully remove the leaves from the com cobs and wash and dry them.
2. Clean the com cobs and grate off the grains.
3. Saute the chopped onion in butter, add the tomato and green pepper and cook for about 20 minutes, then add the grated com, stirring continuously.
4. Should the mixture be too thick, pour in a little milk.
5. Add the raisins, season and leave to cool.
6. For each 'humita' place two leaves of com in the form of a cross, with the wider part in the centre; put in 1 tablespoon of the mixture, fold the leaves over and tie with strips taken from one of the leaves.
7. Cook in stock with pumpkin (or other vegetables if preferred) for about ½ hour.
