1. Choose even-sized pimientos and simmer them for about 5 minutes in boiling water.

2. Take off the tops and remove the seeds.
|
3. Fill with a very highly seasoned mixture of minced or finely cut up cooked chicken, chopped cooked onions, chopped garlic and freshly chopped herbs.
|
4. Sprinkle with oil or dot with shavings of butter and bake in a moderately hot oven (425°F) until heated through and browned.
