1. Make the puff pastry and use it to line 4 small oven glass plates.

2. Spread a thin layer of jam over the bottom.
|
3. Beat the egg yolks, egg whites and sugar together and set aside.
|
4. Heat the butter in a pan and when it reaches boiling point, skim it thoroughly.
|
5. While it is still boiling, stir in the eggs.
|
6. Remove the mixture from the heat and beat well.
|
7. Stir in ground almonds and almond essence.
|
8. Spread a thick layer over the jam and bake the tarts in a moderately hot oven (400°F) until the filling is lightly browned.
|
9. Serve hot.
