What You Need:

8 oz plain flour
2 oz sugar
A pinch of salt
2 oz currants
½ teaspoon bicarbonate of soda
Buttermilk (or milk) to mix
3 oz lard or beef dripping

How To Cook: |
|
|
1. Sieve the flour, salt and soda into a bowl and currants.
|
2. Mix to a fairly soft dough with the milk, then roll out to about ½ inch in thickness.
|
3. Bake on a hot greased griddle on both sides.
|
4. Serve hot and well-buttered.
