What You Need:
(To Make: 1 loaf)

1 pound mixed dried fruit
½ pound caster sugar
1 cupful warm tea
1 pound flour
1 teaspoon bicarbonate of soda
1 teaspoon mixed powdered spice
1 egg
2 oz chopped candied peel or 1 tablespoon marmalade

How To Cook: |

|
1. Put the dried fruit and sugar in a bowl and strain the warm tea over it; leave overnight.
|
2. Well-grease bread tin.
|
3. Sift the flour, soda and spice into a dry bowl, stir in the soaked fruit and the well-beaten egg and mix well, adding the peel or the marmalade.
|
4. Put the mixture into the tin, leveling the surface, and bake in a slow oven (325°F) for 1½ - 2 hours.
|
5. Cool in the tin.
|
6. To serve, cut into slices and butter.
