What You Need:            (To Serve: 4 - 6)

  • 2 - 2¼ pound pike
  • Beaten-egg
  • 2 tablespoons salt
  • Breadcrumbs
  • 1 tin anchovy fillets
  • Fish stock or milk
  • Butter

  • How To Cook:
    1. Scale and clean the fish, but leave the head on. Rub the pike well with salt.

    2. Cut slits across the back of the fish about 1 inch apart and place an anchovy fillet in each cut.

    3. Coat the fish with egg and crumbs, dot with small pieces of butter and bake in a moderate oven (350°F) for 20 - 30 minutes, basting frequently with a little fish stock or milk.

    4. Serve with boiled potatoes and horseradish butter.
