2 pound sterlet
¼ pound butter
1 small bunch mixed herbs
½ pint white wine
Salt
Juice of half a lemon
Pepper

How To Cook: |

|
1. Clean and skin the fish thoroughly.
|
2. Place in a large baking dish, with salt, pepper and the herbs, chopped very finely.
|
3. Pour in the lemon juice and the wine.
|
4. Dot with butter, and bake it for about an hour, basting frequently, until it is nicely browned (350°F).
