What You Need:

1 pound cranberries or lingonberryies
Water
Sugar
2 oz corn flour
Cream
|

How To Cook: |
|
|
1. Stew berries with a little water, add sugar to taste, and sufficient water to make 1 pint of fruit and juice.
|
2. Mix corn flour with a little cold water, and add this to the cooked berries.
|
3. Bring to the boil, and boil for about 2 minutes, stirring all the time, then pour into a wetted mould and leave to set.
|
4. Turn out, and decorate with cream.
|
5. Alternatively, place the mixture in individual dishes, and serve hot with cream.

NOTE:
|
In Finland this sweet is made with lingenberries, a very small type of cranberry. Redcurrants may also be used to make a similar cold sweet.
