What You Need:

¾ pound liver (veal, calf, chicken)
6 oz rice
½ pint water
½ pint milk
2 oz seeded raisins
1 tablespoon minced onion
3 tablespoons butter
1 large egg
1½ tablespoon sugar
3 teaspoons salt
½ teaspoon pepper

How To Cook: |

|
1. Mince and pound the liver. (It may first be parboiled, to make this easier.)
|
2. Make porridge of the well-washed rice, the water and milk and cook for about 1 hour; when it is nearly done, add the raisins and put aside to cool.
|
3. Brown the onion slightly in the butter and mix with the liver, beaten egg, sugar and seasonings.
|
4. Combine the two mixtures thoroughly, pour into a buttered pie dish and bake in a slow oven (325°F) for 1 hour.

5. Serve with cranberry sauce, if available.
