What You Need:

Loin or pork
½ pound prunes
Salt, pepper and ground ginger

How To Cook: |

|
1. Get the butcher to chine the meat and remove all the bones.
|
2. Soak prunes in hot water.
|
3. Spread the meat flat on a board and sprinkle with salt, pepper and ground ginger.
|
4. Arrange the prunes down the center of the meat and fold over, make into a roll and tie with string.
|
5. Melt some pork dripping in a pan, brown the meat on all sides, cover with stock and simmer gently over a low heat, or cook in a moderately hot oven (400°F) for 2 hours, or until the meat is tender.

6. When it is cooked, place it on a hot dish and serve sliced, with browned potatoes, prunes and apple sauce.
