1. Beat the egg yolks with the vanilla essence and gradually mix in the lemon rind, sugar and salt, beating thoroughly.

2. Sprinkle the flour over the nuts and beat into the egg yolks.
|
3. Stiffly beat the egg whites and fold into the mixture.
|
4. Pour into a greased and crumbed loaf tin (9½ inches by 4 inches) and then bake for 1 hour in a moderate oven (375°F).
|
5. The cake may be iced or decorated with whipped cream.
