What You Need:

  • 10 bread rolls (about 1 lb.)
  • 3 egg yolks
  • 3 tablespoons fine semolina
  • 1 pint milk
  • Salt
  • 3 tablespoons butter

  • How To Cook:
    1. Use rolls which are a day old, cut them into cubes and sprinkle with the milk whisked together with the melted butter and eggs.

    2. Add the semolina and turn on to a floured board, knead lightly and form into small round dumplings by firmly pressing between the palms of the hand.

    3. Then throw them into boiling salted water and cook for about 20 minutes.

    4. Remove from the water and tear slightly apart with a fork to allow the steam to escape.

    5. Pour a little butter or dripping over and serve with roast or braised meat.
