What You Need:

1 small chicken, or 2 pound veal or beef
1 large carrot
3 - 4 tomatoes
Salt
A pinch of red pepper
2 sliced onions
1 teaspoon chopped parsley
A few chopped celery leaves
A sprig of thyme

How To Cook: |
|
|
1. Cut the meat, or the chicken, into small pieces.
|
2. Put in a pan with cold water and let it come to the boil. Skim well.
|
3. Add salt, the vegetables, chopped small, and the red pepper.
|
4. Simmer for about 2 hours, adding more water if necessary.
|
5. Sprinkle on the chopped parsley and the sprig of thyme when it is ready to be served.
