What You Need:

  • 1 egg
  • 2 oz caster sugar
  • 2 oz butter
  • 2 oz syrup
  • 2 teaspoons brandy
  • 8 oz flour
  • ¾ teaspoon ground ginger
  • ½ teaspoon baking powder
  • Blanched almonds

  • How To Cook:
    1. Whisk the egg and sugar.

    2. Warm the butter and syrup gently until the fat melts, then add to the egg and sugar and stir in the brandy.

    3. Sieve the flour, ginger and baking powder; make a well in the center of the flour and add the egg mixture.

    4. Knead to smooth dough, roll out thinly and cut into neat diamonds.

    5. Place half an almond in the center of each and bake in a moderate oven (350°F) for 20 minutes, until pale golden-brown.
