What You Need:

  • 5 egg yolks
  • ¼ teaspoon salt
  • ½ gill vinegar
  • 1 oz butter

  • How To Cook:
    1. Beat the egg yolks and add ½ pint water, the vinegar and salt.

    2. Cook carefully in a double saucepan, stirring continually until the sauce thickens.

    3. Remove from the heat, and add the butter, cut into small pieces; stir well and serve.
