What You Need:

1 pound boiled fish
Mashed potatoes
1 oz butter
Lemon juice
2 large sliced onions
FOR THE SAUCE
1 pint fish stock and water mixed, or milk and water
1½ oz flour
1 oz butter
Made mustard

|
FIRST MAKE THE SAUCE:
|
1. Bring the liquid to the boil, blend the flour with a little water, add to the liquid and stir till it thickens.
|
2. Add the fat and mustard to taste.
|
FISH:
|
1. Divide the fish into neat pieces.
|
2. Fry the onions golden-brown.
|
3. Put some of the fish at the bottom of a fireproof dish and add alternate layers of potato, onion, fish and sauce, with a squeeze of lemon juice; finish with a layer of potato.

4. Put in the oven to heat through and brown the top.
