1 pound liver
Chives
4 oz fat bacon
2 - 3 eggs
Parsley
Salt and pepper
Thyme
Breadcrumbs
Onions
Soaked bread
Shallots
A little flour

How To Cook: |

|
1. Mince the liver and 2 oz. bacon and finely chop the parsley, thyme, onions, shallots and chives and mix with the eggs, salt, pepper, breadcrumbs, soaked bread and flour to stiff dough.
|
2. Form into small dumplings, using a teaspoon, drop them in boiling salted water and boil for about 10 minutes.
|
3. Cut the remaining fat bacon in small cubes, fry it gently so that it is almost all melted; pour over the dumplings before serving.
