How To Cook: |

1. Stew the apples in the usual way.

2. Sieve the flour and rub in the butter, mix to a dough with the egg yolk and sour cream or milk, knead, and put aside in a cool place for 30 minutes.

3. Line a 7-inch sandwich tin with half of the pastry, and partly bake it for about 10 minutes in a moderately hot oven (400°F).

4. Mix the ground almonds with the sugar.

5. Spread the pastry with strawberry jam and sprinkle half of the sugar and almond mixture on top.

6. Fold the stiffly whisked egg white into the stewed apples and put into the pie, sprinkling the rest of the almond and sugar mixture on top.

7. Cover with the rest of the pastry; glaze the top with egg white, sprinkle with sugar, and bake in a moderately hot oven (400°F) for about ½ hour.

8. Decorate with cream and glace cherries.
