This "caviare" is very good eaten with roast meat, cold cuts or grills.

1 aubergine
2 - 3 peppers
1 good-sized onion
1 - 2 cloves of garlic
2 - 3 tablespoons salad oil
Salt and pepper
Vinegar

How To Cook: |

|
1. Combine halved aubergines and cleaned seeded.
|
2. Put in a heatproof dish, cover and bake in a moderate oven (350°F) until tender, then allow cooling.
|
3. Skin and mince finely, together with a raw onion and garlic, then mix well with salad oil, some salt and pepper and a very little vinegar.
