2 oz butter
3 oz flour
½ pint water
2 eggs
1 tablespoon sugar
½ teaspoon salt

How To Cook: |

|
1. Melt butter, stir in flour and cook, stirring continuously, for a few minutes.
|
2. Add just over ½ pint water and stir over a good heat until the mixture will come away from the sides of the pan, then remove from the heat and "work" the mixture for about 10 minutes.
|
3. Add an egg, mix this in thoroughly, then add a second egg and finally add sugar and salt, mixing these in well.
|
4. Drop the mixture 1 teaspoon at a time into boiling water and cook until the dumplings rise to the surface; drain in a colander, pour cold water over them to remove the surface stickiness and serve at once in the hot soup.
