1. Rub the butter into the flour with the fingertips until the mixture is like fine breadcrumbs.

2. Add the eggs, cream, sugar and grated lemon peel.
|
3. Mix the dough with a wooden spoon, and then knead lightly to make it smooth.
|
4. Roll it out very thinly and cut into diamonds.
|
5. Make a slit in the center of each and put one end of the diamond through this slit.
|
6. Deep-fry in the hot lard until golden-brown-do not put too many in at a time.

7. Drain well.
