What You Need:
(To Serve: 6 - 8)

4 oz medium noodles (2½ cups)
2 tablespoons flour
½ teaspoon salt
2 packages frozen chopped spinach or 2 cups cooked spinach chopped
½ teaspoon paprika
1/8 teaspoon pepper
1 cup milk
½ pound Gruyere cheese, coarsely grated
3 tablespoons butter

How To Cook: |

|
1. Start heating oven to moderately hot (400°F).
|
2. Cook noodles as package label directs; drain and rinse. Cook spinach and drain.
|
3. In saucepan, melt butter; stir in flour, salt, paprika, pepper, gradually stir in milk.
|
4. Cook until thickened, stirring constantly, remove from heat and stir in spinach.
|
5. In greased 12-inch by 8-inch by 2-inch baking dish, arrange half of noodles, sprinkling with half of cheese; spoon spinach mixture over cheese, add layer of remaining noodles, and sprinkle remaining cheese over top.

6. Bake for 15 minutes or until cheese is bubbly.
|
7. Serve with breaded veal cutlets or grilled lamb chops.
