How To Cook: |

1. Melt the butter, gradually mix in the flour and cook for a minute; pour in the milk slowly, stirring all the time, and cook for 3 minutes.

2. Let the sauce cool, and then mix in the egg yolks and salt and pepper to taste.

3. Cut the cheese into cubes (first setting aside sufficient thin slices to garnish the finished dish); add the cheese cubes to the sauce and put 2 teaspoons of this cheese filling on each slice of ham roll up and place in an ovenproof dish.

4. Cover the rolls with tomato puree and place the thin slices of cheese on the top.

5. Cook for about 15 minutes in a moderate oven (375°F).
