What You Need:

2 pound fish (can be anyone or a combination of tuna, eel, mackerel, or red mullet)
Chopped parsley
1 oz seasoned flour
¼ pint vinegar
6 tablespoons olive oil
3 teaspoons concentrated tomato puree or 1 tin tomato juice
2 - 3 onions, sliced
1 clove of garlic

How To Cook: |

|
1. Prepare the fish and cut into 2-inch squares, coat with seasoned flour and fry in hot olive oil, then remove.
|
2. Fry the onions until yellow and add the chopped garlic and parsley and the fish.
|
3. Pour over the vinegar, tomato puree and sufficient water to cover, bring to the boil and simmer very gently for ½ hour, taking care not to break the fish.
|
4. Serve hot with noodles or macaroni.
