How To Cook: |

1. Sieve the flour into a bowl and rub in the fat.

2. Add the sugar, egg yolks and a few drops of vanilla essence and work to a smooth paste.

3. Put in a cool place for about 30 minutes.
|
4. Roll out into a large round about ¼ inch thick, prick all over and bake in a moderate oven (350°F) for about 20 minutes, then cool.

5. Brush the top with a thick glaze made by simmering some red-currant jelly in a small pan.
|
6. Top with strawberries (halved if large) and decorate with cream.
