What You Need:            (To Serve: 2 - 4)

  • 1½ pound lean veal fillet
  • Lard for frying
  • ¼ pound mushrooms
  • ½ oz flour
  • 1 tablespoon chopped parsley
  • ½ pint stock
  • Salt and pepper
  • Creamed potatoes or boiled rice

  • How To Cook:
    1. Trim the meat if required, slice it thinly, and beat to make it tender.

    2. Fry quickly on both sides in hot lard, and then keep it hot.

    3. Slice and fry the mushrooms, sprinkle in the flour and parsley, and add the stock, mixing well.

    4. Season, bring to the boil, add the meat, and cook gently until tender - about 20-30 minutes.

    5. Serve with a border of creamed potatoes or rice.
