The soup course in Denmark sometimes consists of a mixture like gruel, porridge or hot blancmange, usually served with fruit, jam or a spicy flavoring and sugar. Here is an example.

3 oz butter
4 oz flour
1½ pints milk
Salt

How To Cook: |
|
|
1. Melt butter in a saucepan.
|
2. Stir in flour and cook for a minute or two, then gradually add boiling milk and a little water, stirring continuously.
|
3. Add a pinch of salt, and then simmer for 10 minutes.
|
4. Eat with sugar, ground cinnamon (if desired) and fruit juice.
