What You Need:            (To Serve: 2)

  • ¾ pound boiled collar bacon
  • ¼ pint milk
  • ¼ pint bacon stock or water
  • Sauce
  • A few cooked mushrooms
  • 1 oz butter
  • 2-3 diced cooked beetroot
  • 1 oz plain flour

  • How To Cook:
    1. Cut boiled bacon into small cubes.

    2. Melt butter, blend in the flour, gradually stir in milk and stock, and cook until sauce thickens.

    3. Add the mushrooms and bacon, season to taste and heat through.

    4. Serve with hot beetroot and garnish with chopped parsley.
