What You Need:            (To Serve: 4)

  • 5 - 6 medium beetroots
  • Lemon juice to taste
  • 2 sour apples
  • Sugar to taste
  • 1 tablespoon bacon fat
  • 2 - 3 tablespoons sour cream
  • Salt and pepper to taste
  • ½ teaspoons flour

  • How To Cook:
    1. Peel the beetroots and apples and grate coarsely, reserving all the juices.

    2. Melt bacon fat; add grated beetroots and apples, together with all their juices.

    3. Season with salt and pepper, and add lemon juice and sugar to taste.

    4. Simmer, covered, for half an hour.

    5. Reduce liquid, add sour cream combined with flour and let it bubble.

    6. Simmer for a few more minutes.

    7. This is excellent with roast dishes.
