What You Need:
(To Make: 1 cake)

FOR THE TOPPING
8 oz cream cheese
Powdered vanilla (or vanilla essence to flavor)
6 egg yolks
2 oz melted butter
8 oz caster sugar
Glace icing
FOR THE PASTRY
8 oz flour
2 oz sugar
4 oz butter
1 egg yolk

How To Cook: |

|
1. Tie the cream cheese in muslin and squeeze out the moisture.
|
2. When the cheese is dry, grate or crumble it into a mixing bowl, and add the egg yolks, melted butter, sugar and a little powdered vanilla.
|
3. Beat thoroughly till the mixture is quite smooth and with no lumps (this will take about ½ hour).
|
4. Make the pastry with the flour, butter, sugar and egg yolk, and cover the bottom of a greased baking tin with it.
|
5. Place the cheese mixture on top, and bake for 1 hour in a moderate oven (350°F).

6. When the cake is cold, cut it into squares and coat each with a little glace icing.
