1 boiling fowl, cut up
1 onion, finely chopped
1 tablespoon salt
2 tomatoes, skinned, deseeded and chopped
½ a garlic clove, finely chopped
½ cup rice
2 carrots, diced
Pepper

How To Cook: |

|
1. Put the fowl in a large pan with 3 quarts water, bring slowly to the boil, add the salt and skim the surface of the water.
|
2. Simmer for about 2½ hours, add the remaining ingredients and continue to cook until the chicken is done.
|
3. Skim the fat off the top. In serving the soup give each person a piece of the chicken.
