This is a traditional sweet to serve on Christmas Eve: the person who gets the almond in his or her portion will, it is said, be married before the next Christmas.

What You Need:
(To Serve: 4 - 6)

1 cup rice
½ cup single cream
2 tablespoons butter
1 teaspoon salt
1 cup water
2 tablespoons sugar
4 cups milk
1 teaspoon vanilla essence
A small piece of stick cinnamon
1 blanched almond

How To Cook: |

|
1. Rinse the rice under cold running water.
|
2. Melt half the butter in a large saucepan, put in the rice and water and boil for about 10 minutes, or until the water is absorbed.
|
3. Stir in the milk and cinnamon and cook gently for 40 minutes or until tender, stirring from time to time.
|
4. Blend in the cream, salt, essence and remaining butter and stir in the almond at the last minute before serving.
|
5. Extra milk, sugar and ground cinnamon are served with the pudding.
