What You Need:

2 eggs, slightly beaten
¼ cup flour
1 cup sugar
½ teaspoon almond essence
2 cups flaked coconut

How To Cook: |

|
1. Grease and flour several baking trays.
|
2. Put the eggs in a basin and add the sugar all at once; using an egg beater beat until smooth.
|
3. Then, using a wooden spoon, stir in the coconut, flour and essence, mixing until well blended.
|
4. Drop rounded teaspoons of dough about 2 inches apart on to the trays, put in a slow oven (300°F) and bake for 12 - 15 minutes, or until the edges are golden-brown.
|
5. Immediately remove from the trays and cool on a wire rack.

NOTE:

These cookies do not store very well, so it is best to make and enjoy them the same day.
