1 pound lamb's liver, cut into slices
1 clove of garlic
1 bay leaf
½ pound gammon rashers
Salt and pepper
¼ pint red wine
1 tablespoon chopped parsley
1 tablespoon olive oil

How To Cook: |

|
1. Put the sliced liver and gammon rashers into a fireproof dish, add the wine, oil, garlic, bay leaf and seasoning, cover, and cook in a moderate oven (350°F) for 30-40 minutes.

2. Sprinkle the dish with the finely chopped parsley before serving.
