What You Need:
(To Serve: 4 - 6)

6 turkey or large capon livers, soaked in milk for about 2 hours
3 eggs, separated
1 tablespoon butter
Salt and pepper to taste
1 stale white roll, moistened in milk, and mashed, or equivalent in breadcrumbs
½ medium onion, grated and sauteed in butter

How To Cook: |
|
|
1. Chop livers, press through a sieve, and then combine with roll or breadcrumbs.
|
2. Cream egg yolks and butter, add to liver mixture, season to taste and mix thoroughly.
|
3. Fold in stiffly beaten egg whites and spoon the mixture into well-greased muffin tins.
|
4. Cover with greased greaseproof paper and bake in a moderate oven (375°) for about 30 minutes.

NOTE:

Serve as a side dish with a sharp sauce.
