		3 tablespoons butter or margarine
		2 egg yolks, slightly beaten
		2 tablespoons flour
		1½ cups cooked or canned lobster, in pieces
		¾ tablespoon sugar
		1½ teaspoons white pepper
		1½ cups single cream
		1 - 2 tablespoons lemon juice
		½ cup milk

	1. Melt the butter over a low heat.

	2. Using a wooden spoon, blend in the flour, sugar, salt and pepper; remove from the heat.

	3. Gradually stir in the cream, then the milk and cook over a low heat, stirring constantly, until smooth and thickened.

	4. Stir a little of this mixture into the egg yolks, then return all to saucepan and cook for about 1 minute longer.

	5. Add the lobster to sauce and heat gently until the lobster is hot; remove from heat and stir in the lemon juice.
