											| How To Cook: |

											|  |  | 1. A rich yeast pastry rolled out as for a Swiss roll filled with a rich poppy-seed mixture, rolled up as for a Swiss roil, baked and finished with a glace icing. 
 
 |  | FILLING: |  | 1. Pour some boiling water over the poppy seeds and leave to stand for 3 hours. 
 
 |  | 2. Drain overnight. 
 
 |  | 3. Mince three times or pound in a mortar. 
 
 |  | 4. Add the remaining ingredients, flavoring with essence and lemon rind to taste.
