		2 pound cod
		¼ pint olive oil
		2 onions
		Butter
		1 pound tomatoes
		1 clove of garlic, finely chopped
		4 oz rice boiled in salted water for 10 minutes
		¼ pint white wine
		Salt and pepper
		Chopped parsley

	1. If cod fillet is used, cut it into about 4 pieces (one per person), and put into a pan with the oil.

	2. Lightly brown the sliced onions in a little butter, and add these to the pan, with the skinned and sliced tomatoes, the finely chopped garlic, the rice, the wine and a little salt and pepper.

	3. Cover and simmer gently for 15-20 minutes, then lift out the pieces of cod on to a dish and add some chopped parsley to the liquor.

	4. Stir well and pour the mixture over the fish.

	5. Alternatively, leave out the chopped parsley from the sauce and garnish the dish with fresh herbs.
