What You Need:            (To Serve: 4 - 6)

  • 3 pound whole rump steak
  • 2 carrots
  • ½ pound fat pork
  • A bouquet garni
  • 2 oz butter
  • 2 tablespoons vinegar
  • 2 onions
  • 2 tablespoons treacle
  • 4 anchovies
  • 2 tablespoons brandy
  • Seasoning
  • 1½ pints stock

    FOR THE SAUCE
  • 2 oz butter
  • ¼ pint cream
  • 2 oz flour
  • Seasoning
  • 1 pint stock

  • How To Cook:
    1. Trim and wipe the meat.

    2. Cut the pork fat into ¼ inch strips and lard the steak with these, using a larding needle.

    3. Brown the meat in melted butter, then removes it from the pan.

    4. Put the other ingredients at the bottom of the pan and put the meat on top.

    5. Add the stock, and cook gently for 2 - 2½ hours, then remove the meat and keep hot.

    6. Make a sauce with the butter, flour and strained stock; lastly, add the cream and seasoning.
