3 pound salmon
4 oz red wine (dry)
Salt
3 oz butter
4 oz fresh bacon
1 oz flour
Juice of 1 lemon

How To Cook: |

|
1. Salt and lard the salmon with half the amount of fresh bacon; slice the rest of the bacon, put round the fish and roast in a hot oven for about 25 minutes.
|
2. When brown sprinkle with lemon juice, add wine and put back into the oven.
|
3. Before serving cream flour and butter, add wine sauce, bring to a boil and pour over the fish.
