		1 pint boiling water
		1 large onion, finely chopped
		Salt and pepper
		1 tablespoon chopped parsley
		½ pound rice

	1. Heat the oil in a saucepan, add the chopped onion and cook until it is just golden-brown.

	2. Add the rice, and continue cooking very slowly for 5 minutes, then pour in the boiling water and add the seasoning, stir well, cover closely and cook gently until all the liquid is absorbed and the rice tender 30 - 40 minutes.

	3. Stir in the chopped parsley just before serving.
