How To Cook: |

1. Put the butter, ¾ cup of sugar and 2 cups of hot water into a saucepan and bring to the boil.

2. Quickly stir in enough flour to hold the dough together; when it leaves the sides of the pan, remove from the heat and beat in the eggs, one at a time.

3. Roll out the dough on a slightly floured board to about ½ inch thick and cut into small squares.
|
4. Make a syrup with the remaining sugar and water and the lemon peel; boil for 2 - 3 minutes and cook the pastry squares in: it, a few at a time.

5. Drain and serve on a hot plate, dusted with the cinnamon and sugar.
|
6. Alternatively, flavour the cooking syrup to taste with a sweet white wine.
