What You Need:            (To Serve: 6 - 8)

  • Salt and pepper to taste
  • 4 oz grated Parmesan
  • 1 cup sour cream
  • 2 pound sole (or flounder)
  • Breadcrumbs and butter for topping
  • Flour
  • 3 tablespoons butter

  • How To Cook:
    1. Season the fish, dust with flour and brown lightly in butter.

    2. Arrange in a shallow baking dish.

    3. Sprinkle thickly with Parmesan.

    4. Pour in the sour cream to which ½ teaspoon flour has been added, sprinkle with breadcrumbs, and top with bits of butter.

    5. Bake in a hot oven (450°F) for 20 minutes.

    6. Serve with lemon slices.
