What You Need:

1 large salt herring
1/3 cup sugar
½ cup vinegar
2 tablespoons chopped onions
2 tablespoons water
5 peppercorns, crushed
10 whole allspice, crushed
Fresh dill sprigs and onion rings to garnish
2 sprigs fresh dill

How To Cook: |

|
1. Clean the herring, removing the head, rinse under cold running water, then soak it in cold water for 10-12 hours; change water a few times.
|
2. Cut the herring along the hack, remove the big backbone and as many small ones as possible and pull off skin. (The bones come out easily after the soaking.)
|
3. Drain the fillets on absorbent paper, then place them together one on top of the other, so that they look like a whole fish.
|
4. Cut into thin slices with a sharp knife, slide a spatula underneath and remove to a long, narrow dish.
|
5. Mix the remaining ingredients together in a saucepan, bring to boiling point and simmer for a few minutes; cool and strain.
|
6. Pour the liquid over the herring and garnish.
|
7. Chill and serve with small boiled potatoes.
