How To Cook: |

1. Make up Cheese Pastry.
|
2. In bowl, with mixer at high speed, egg whites, till stiff; then beat in sugar, lemon juice, grated lemon rind, almond extract, fold in ground blanched almonds.

3. Heat oven to 400°F.
|
4. Lightly grease two baking sheets.
|
5. On floured surface, roll out one-third Cheese Pastry 1/8 inch thick.
|
6. Cut into 10-inch circle; cut circle into 8 wedges.
|
7. In center of wide end of each wedge, place rounded teaspoonful almond mixture.
|
8. Starting at wide edge, lightly roll up each wedge; place, center point down, on baking sheet; curve ends in crescent.
|
9. Repeat with remainder.
|
10. Brush crescents with beaten egg; sprinkle with almonds.
|
11. Bake 10-12 minutes, cool.
