What You Need:
(To Serve: 2 - 4)

2 tablespoons olive oil
1 teaspoon chopped parsley
4 oz almonds, finely chopped
1 oz breadcrumbs
2 pints chicken stock
1 tablespoon chopped onion
Salt and pepper
½ teaspoon chopped garlic

How To Cook: |
|
|
1. Heat the olive oil and slowly cook in it the almonds, chopped onion, garlic and parsley, stirring all the time with a spoon: the mixture should be well cooked but not browned.

2. Add the breadcrumbs and cook very slowly for a further 3 minutes.
|
3. Pour on the stock, season well and simmer for 15 minutes.
