What You Need:

2 - 3 slices of cooked ham
½ pound sliced cooked potatoes
Olive oil or butter
Some strips of sweet peppers
1 tablespoon finely chopped onion
A little good stock
½ pound tomatoes
½ pound Continental-type sausage
½ pound cooked peas
A few asparagus tips
4 - 8 eggs

How To Cook: |

|
1. Cut the ham into small pieces and fry in the oil or butter, with the onion, until it begins to color.
|
2. Add the other vegetables and sufficient stock to moisten, then saute gently for a few minutes, stirring carefully.
|
3. Add the sliced sausage and put the mixture into an ovenproof dish; break the eggs on top and put in a hot oven (450°F) for a few minutes, until the eggs are set.
