What You Need:

1 pound of any cold cooked meat (equal quantities of fat and lean)
1 egg yolk
1 teaspoon cream or evaporated milk
Pepper and salt
Bread fingers
1-2 finely chopped shallots
Coating batter
Deep fat for frying

How To Cook: |
|
|
1. Mince or finely chop the meat, add pepper and salt and the finely chopped shallots and mix to a paste with the egg yolk and cream.
|
2. Spread on narrow fingers of bread, dip in coating batter and fry in deep fat till a nice golden-brown.
