1 pheasant
2 oz diced Spanish raw ham
¼ pint red wine
½ pint chicken or game stock
½ pound tomatoes
Salt and pepper
1 onion
Slices of fried bread

How To Cook: |
|
|
1. Joint the pheasant and put it in a casserole with the wine, stock, sliced onion, ham and sliced tomatoes, salt and pepper.
|
2. Simmer slowly until the pheasant is cooked.
|
3. Dish the joints of pheasant on the pieces of fried bread and keep hot.
|
4. Reduce the sauce, sieve it, reheat and pour over the pheasant.
|
5. Serve at once.
