1. Wash the cucumbers and cut into 1½-inch lengths without peeling; cut each piece in half lengthwise and remove the seeds.

2. Add 1 tablespoon salt to the cucumbers, mix well and leave to stand for 15 minutes.
|
3. Cut the onion (including the top) into 1½-inch lengths and shred each piece lengthwise very finely.
|
4. Chop the garlic and red chilli pepper into fine pieces.
|
5. Wash the salt from the cucumbers.
|
6. Add the onion, garlic, red pepper, ½ tablespoon salt and water, mix well and leave to mature.
|
7. In warm weather 2 days are sufficient, but in cold weather a week is required.
